Non-ionic emulsifiers are surfactants that can be soluble in aqueous solution without ionization, that is to say, they are in a neutral non-ionic molecular state or micelle state in the solution. They won't dissociate into ions when they are in water. But they dissolve in water by their hydroxyl groups and ether groups as the weak aqueous hydrophilic groups. They are composed of hydrophilic groups and lipophilic groups.
In a non-ionic emulsifier molecule, hydrophilicity and lipophilicity are determined by the numbers of hydrophilic groups and lipophilic groups. A hydrophilic group is a macromolecular group consisting of a certain number of oxygen-containing groups(ether linkage and hydroxyl group). A lipophilic group is a long hydrocarbyl chain or alkyl chai or phenyl, etc.
Non-ionic emulsifiers have excellent wetting and cleansing properties and they also have good emulsification, permeability, foaming and defoaming properties, antistatic function, sterilization, etc. They have high stability without ionizing in aqueous solution. Non-ionic emulsifiers are not affected by strong electrolyte, strong acid, strong base. Furthermore, they are not affected by calcium, magnesium ions in hard water. They have good compatibility with anionic and cationic surfactants or other types of surfactants. They are non-toxic, non-irritant, and are biodegradable, which lead non-ionic emulsifiers to become a new generation of "green products".
