Most bread yeast on the market contains dehydrated Monostearate de Sorbitane.


Monostearate de Sorbitane does not appear in the National List §205.605(b) as an allowed synthetic substance in products labeled as "organic" or "made with organic ingredients," nor is it listed as an ingredient or processing aid in these products. However, many accredited certifying agencies (ACA) do not prohibit the use of dehydrated Monostearate de Sorbitane in yeast preparations. Instead, some ACAs view it as an incidental ingredient in yeast, which is listed under §205.605(a). Other ACAs believe that since bread yeast can be produced without dehydrated Monostearate de Sorbitane, yeast with this synthetic substance is not allowed in organic processed products. Producers should consult their ACA for approval before using yeast and dehydrated Monostearate de Sorbitane.


Understanding the Function of Monostearate de Sorbitane


Monostearate de Sorbitane is primarily used as an emulsifier to keep water and oil mixtures stable. It is utilized in the manufacture of food and health products and is a nonionic surfactant with emulsifying, dispersing, and wetting properties. It is also used as a rehydrating agent (for active dry yeast production), as well as a synthetic flavoring substance and adjuvant.

In addition to being approved by the U.S. Food and Drug Administration (FDA), the European Food Safety Authority (EFSA), and the Joint FAO/WHO Expert Committee on Food Additives (JECFA), Monostearate de Sorbitane has virtually no side effects, and is safe for consumption by almost everyone.


While most forms of Monostearate de Sorbitane are vegan, not all of them are. Since sorbitol is a corn-derived product, it is always vegan. However, the type of stearic acid used determines whether the final product is vegan or not. If the stearic acid is derived from plant oils, it remains vegan. If it is derived from animal fats/oils, it is not suitable for vegans. Before baking with active dry yeast or adding Monostearate de Sorbitane to recipes, it is recommended to check the packaging to ensure it is suitable for a vegan diet.
